The event waste problem
Catered events generate large volumes of wet food waste in a short time, and containers are often moved through public areas. Free liquid makes that messy, unhygienic and slow.
Prepare before service
Place material in containers before service begins so liquid is captured as it arrives. Retrofitting during a busy event rarely happens, and that is when leakage occurs.
Scale the dose to the menu
Wet menus with sauces, seafood or salads produce far more liquid than dry finger food. Estimate from the menu rather than from headcount alone, and add margin.
Plan the removal route
Decide how containers will be moved and where they will go before the event. Solidified waste is easier to handle, but the route still needs to avoid public areas and lifts where possible.
