By holding liquid in a gel, the pad reduces the surface area available for microbial growth and limits odour transfer to the fridge or display cabinet.
Supporting practice
Thaw under proper temperature control, do not overload pads, and dispose of them promptly. These steps matter more than the pad itself for odour control.

Antibacterial additives must be permitted for food-contact use and supported by evidence. Keep any claim proportionate to the documentation held.
