Start from exudate volume
Estimate how much liquid the product will release during thawing, which depends on cut, species and whether it was previously frozen slowly or quickly. Measure rather than guess.
Allow for the release pattern
Exudate does not all appear at once. The pad needs enough capacity for the total volume even though it arrives gradually, so size for the whole thaw cycle.
Do not over-specify capacity
Very high capacity usually means a softer gel and more rewet under the weight of the product. Choose the capacity that handles the volume with the firmest gel available.
Validate with the real product
Test pads under actual thawing conditions with the actual product. Laboratory water tests consistently overstate how well a pad will perform on exudate.
