Keep it dry
The powder is hygroscopic and loses effective capacity once it has absorbed atmospheric moisture. Store sealed, away from sinks, steam and cleaning areas.
Avoid heat
Heat accelerates ageing and reduces performance over time. Keep stock away from ovens, dishwashers and direct sun, none of which are unusual locations in a working kitchen.
Rotate stock
Use older material first and check occasionally for caking or damaged packaging. Caked material usually indicates moisture ingress and should not be relied upon.
Re-test doubtful stock
If material has been open for a long period or stored poorly, run a quick uptake check before depending on it. The test takes only a few minutes.
